1/4 cup water
1 tbsp soy sauce
1 1/2 tsp sugar, white or brown
1 1/2 lb finely diced chicken or ground chicken
2/3 cup water chestnuts, drained and finely diced
2/3 cup finely diced fresh mushrooms or canned mushrooms, drained
1/3 cup sliced green onions (optional)
1 head iceberg lettuce
Cooked white or brown rice
Vegetarian version: Substitute 16 oz diced tofu for chicken
